Monkey Pops

At my house we have stayed obsessed monkeys between the “Zoo Train!” class for my toddler and “Confetti Days!” class for my preschooler.  Even the kids in “Join the Parade” talked a bit about zoos and animals this week.  So, I found another monkey snack for everyone.   It looks perfect for this crazy hot weather we’ve been having.  Hope you enjoy it!

Monkey Pops
You will need:

  • Ripe bananas (1/2 banana per child)
  • 1 1/2 cups semisweet chocolate chips
  • 2 Tablespoons canola oil
  • Sprinkles (or other toppings such as peanut bits, granola, or crunchy cereal)

Cut bananas in half and insert a popsicle stick halfway into each one. Place a piece of waxed paper on a baking sheet. Lay the banana pops on the waxed paper and put them in the freezer for one hour.  Stir together the chocolate chips and the canola oil over very low heat until melted. One at a time, remove the pops from the freezer and, holding them over the saucepan, spoon the chocolate over them. Roll each chocolate-covered banana in a topping and return it to the freezer to harden for 1 to 2 hours before serving.  Remove from freezer 10-20 minutes before you intend to eat them to soften slightly.
